💪 How much protein does this toast contain?

🥪 Prefer chicken or a vegetarian option?

Not a fan of fish, or simply prefer a vegetarian meal? With a few simple adjustments, you can easily create a different version.

🍗 Chicken variation

Replace the smoked salmon with 50 g of grilled or pan-fried chicken breast. The cottage cheese and avocado still provide a deliciously creamy texture, while the chicken adds even more protein. Protein per serving: approximately 30-32 grams without egg and 36-38 grams with a boiled egg.

🥑 Vegetarian variation

Skip the salmon and top the toast with 50 g grilled halloumi cheese alongside the cottage cheese and avocado. The halloumi adds a savory flavor and satisfying bite. Finish with arugula, black pepper, and a splash of lemon juice if desired. Protein per serving: approximately 30-33 grams without egg and 36-39 grams with a boiled egg.

🧊 Storage

  • This toast is best enjoyed immediately after preparation.
  • If you'd like to prep ingredients in advance, store the cottage cheese, salmon or chicken, and avocado separately in airtight containers in the refrigerator.
  • Toast the bread just before serving to keep it crisp.
  • Add the avocado at the last minute to minimize browning.

💡 Variation Tips

  • Extra protein? Add a boiled egg or use a little extra cottage cheese.
  • Want more vegetables? Add sliced cucumber, tomato, or extra arugula.
  • Like a bit of heat? Finish with chili flakes or a drizzle of sriracha sauce.
  • More flavor? Mix the cottage cheese with lemon juice, black pepper, and fresh chives.
  • No whole wheat bread at home? Use sourdough or multigrain bread instead.

This cottage cheese toast is ideal for anyone looking for a quick, nutritious meal. Thanks to its combination of protein, fiber, and healthy fats, it makes a delicious start to your day or a satisfying lunch during a busy workday. With several easy variations, there's a version to suit almost everyone's taste.
