Spinach and tomato omelette

• 1 handful of fresh spinach
• 1 small tomato (diced)
• 1 tablespoon of milk (optional, for a fluffier omelette)
• 1 teaspoon of olive oil
• Salt and pepper to taste
• Optional: a small amount of grated cheese
